Berry Cake
Ingredients *150g ground almonds (almond meal), *1 lemon *1 1/4 cups pure icing sugar, sifted *3/4 cup gluten-free plain flour *5 eggwhites, at room temperature *150g butter, melted, cooled *150g punnet blueberries or raspberries
Directions - In a bowl, combine almonds, sugar, flour and lemon rind well. - Scrape the mixture into the holes, filling each by 3/4 full. - Transfer on a wire rack for cooling. - Set oven to 200 degrees C preheat settings. Prepare a 12 x 1/3 cup muffin pan. - Whisk egg whites in another bowl. Add this to flour mixture, combining lightly.
